Recipe: Vegan Avocado Chocolate Cake

Hey Kids! It’s so lovely to be back on board for another year of food love. A new year means new beginnings and I can promise I will be sharing with you some new, interesting and delicious recipes. Avocados are super cheap at the minute, so here’s a tasty little number.

What you need…

  • 3 cups white flour
    6 tbs unsweetened cocoa powder
    1/2 tsp salt
    2 tsp baking powder
    2 tsp baking soda
    2 cups sugar
    1/4 cup vegetable oil (I use rice bran)
    1/2 cup soft avocado – well mashed, I used one avocado
    2 cups water
    2 tbs white vinegar

How to Make…

  • Preheat your oven to 180°C.
  • Grease your muffin pan (this recipe will make about 24 medium sized ones (or alternatively you can use cupcake papers).
  • Sift together all of the dry ingredients except the sugar. Set aside.
  • Mix all the wet ingredients together in a bowl (including the mashed avo).
  • Add sugar into the wet mix give it a big ol’ mix.
  • Throw all your mixtures together and give it a really good mix, I like to use my electric beater.
  • Pour batter into muffin pans (about 2/3 to 3/4 full). Bake for 15 mins in the middle of the oven. Insert a tooth pick in the middle to see if they’re done, if it comes out clean, you are all ready to go. I checked mine after 10mins.
  • Remove from oven and let cool for 10mins in the tray before you remove them.

P.S. this recipe also makes a great cake if you put the mixture in a cake tin and bake for 45mins-1hour. Cover with tin foil after 30mins and then check with a skewer every 10 minutes from then on.
